Múlt csütörtökön elkezdtük a várva várt bortúrákat, az első állomás és az óévben az utolsó is : Chablis. Bevallom az egyik kedvencem, mióta Dijoni diák vagyok. Rendkívül izgalmas, egzotikus, ropogós, üdítő borok teremnek ezen az észak-burgundi borvidéken, mely Dél-Anglia és Champagne után a harmadik legészakabbra fekvő bortermő vidék. Specialitása főképp a talajban rejlik : kimeridzsi korszakból (késő jura kor) származó fosszilisek és egyéb mészkő adják a lejtők talaját, mely által minerális, savgazdag borok teremnek, kizárólag Chardonnayból. A Chablis termőtáj négy lépcsőből áll : a legalacsonyabb kategória a Petit Chablis, mely a magasabban fekvő területek bora (itt már « portlandais » mészkő a talaj, egy sokkal keményebb és kevésbé heterogén kőzet). Ezután következik a Chablis village kimeridzsi talajon és a Chablis Premier Cru-k ezeknek a déli, dél-keleti, dél-nyugati területein, számszerint 79. Majd a legmagasabb kategória a Chablis falu mellett sorakozó összesen 7 Chablis Grand Cru, nem több mint 100 hektár.

Last Thursday we have started the wine trips that we have been waiting for long time. 1st wine region, and also the last in 2011: Chablis. I have to admit that since I’m dijonais Chablis is one of my favorite wines. This northern-type wine region produces amazingly fresh, exotic and mineral wines, which is one of the coolest vineyards in the World, after Southern-England and Champagne. Its specialty is due to the soil: limestone and clay with Kimmeridge fossils, that give a very good acidity and minerality to the wines. They produce only Chardonnay in Chablis. The appellation has four categories: the smallest wines, named Petit Chablis are produced on the upper part of the hills, where the soil is harder and thicker, pure limestone. The second and the third are Chablis village and Chablis Premier Crus on the best exposures. (Kimmeridge soil, 79 Premier Crus on the southern, south eastern, south western sides) The biggest Chablis are the 7 Chablis Grand Crus, which are situated next to the town, 100 hectares allover.

The job is not easy as bio wines don’t allow several treating methods in the vineyards, which is difficult to bare in such a cool climate area. Romain Bouchard showed us some excellent wines from the Vau de Vey Premier Cru, many of us came back with packs of 2010 to Dijon.”
